Cauliflower is a brilliant low-carb alternative to potatoes, and they contain lots of phytonutrients too! Served as a lighter alternative to mash potatoes.

Ingredients:
- 450g cauliflower, chopped into florets
- 60g Pili Pushers Unsalted pili nuts
- 24g water
- ΒΌ teaspoon Himalayan pink salt
- Pinch of black pepper
Optional:
- 2-3 cloves of roasted garlic
- 1 teaspoon fresh chopped thyme
METHOD:
- Fill a large saucepan with about an inch or two of water and insert a steamer basket
- Bring the water to a boil, and add the cauliflower florets into the basket
- Steam for 7 to 8 minutes or until fork tender
- Blend pili nuts, Himalayan pink salt and water until it forms a smooth fluffy cream
- Add drained cauliflower florets (optional: add garlic too) into the pili nut cream and continue to blend till combined and smooth
- Sprinkle thyme and black pepper
